The herbs most commonly used in Persian cooking and in grandmas Persian remedies are dill, mint, parsley, cilantro, basil, chives, fenugreek, and tarragon, while marjoram and oregano make occasional appearances.  These herbs are frequently mentioned in  Persian herbal remedies and many natural health books as ancient Persian remedies. There's no stigma against using dried herbs, in fact, dried spearmint and dried dill weed are de rigueur in a Persian kitchen and considered as spices in Iranian traditional medicine.
